There are side dishes… and then there are these awesome Air Fryer Baby potatoes. Aka an effortless, quick and easy side you can whip up anytime. Golden, crispy on the outside, soft and fluffy in the middle, and ready faster than it takes to preheat the oven.

Bonus is that this Air Fryer Mini Potatoes recipe has no parboiling or complicated steps. I just toss, cook, shake and try my hardest not to eat half straight from the basket. Key Ingredient Notes

You probably already have everything. Full measurements in recipe card below.

  • Baby potatoes: Yellow, red or tri-color baby potatoes all work brilliantly. Baby potatoes vary in size so you may want to leave very small potatoes whole, and you may need to cut larger potatoes into quarters. Cut potatoes lengthwise. Feel free to use pre-washed potatoes to save some time.
  • Olive oil: Or select your favorite light, neutral-flavored oil, such as avocado oil. Olive oil spray is incredibly convenient too. 
  • Italian Seasoning: This is my preferred seasoning. If you are feeling it, then add in some garlic powder, smoked paprika, Creole seasoning, onion powder etc. Add fresh herbs and freshly grated Parmesan just before serving. Add 2-3 cloves of freshly minced garlic half way through cooking to make garlic roasted potatoes. 
  • Salt: Add salt to taste. Stone house seasoning is great too.

How To Make Air Fryer Baby Potatoes

  1. Preheat your air fryer to 400 degrees F / 200 degrees C.
  2. Wash potatoes and pat them dry. 
  3. Cut the baby potatoes in half lengthwise and place them into a large mixing bowl.
  4. Add the oil, Italian seasoning, and salt and mix until the potatoes are well coated. 
  5. Place the potatoes into the air fryer basket and cook for 15 – 20 minutes, shaking the basket about every 5 minutes. Air fryer baby potatoes will pierce easily with a fork when they are cooked through. 
  6. Cook until golden in color and the potatoes pierce easily with a fork. 

Bintu’s Pro Tips To Get Crispy Air Fryer Baby Potatoes

Whilst these are super easy, I have a few tips that make a big difference.

  • Make sure to dry the potatoes well, as wet ones won’t crisp up.
  • Leave the skins on, this is what help them crisp up perfectly and makes this recipe so quick to prepare. 
  • Toss the potatoes in a large bowl to coat them in the seasoning – oil blend. There’s no need to use additional oil in the air fryer. Too much oil = soggy. 
  • Add potatoes in a single layer in the air fryer basket so heat circulates and they cook and crisp up. Cook in batches if you need to make a lot.
  • Shake the basket every 5 minutes so that the potatoes cook evenly and crisp up. 
  • Preheat your air fryer according to the manufacturer’s instructions. Air fryers cook differently, so check for doneness and adjust the cooking time accordingly. 

Prep And Storage

Chop and season the potatoes ahead of time, then refrigerate until ready to cook. If you have leftovers (erm are these a thing), then store in an airtight container in the fridge for up to 4 days. Reheat the potatoes in the microwave in 30-second increments until heated through. You can also reheat in the air fryer for 4-5 minutes or until hot and crispy.

When cooking mini potatoes in air fryer, the trick is to cut the potatoes so that the pieces are all the same size. Smaller potatoes will cook slightly faster than larger potatoes, so halving or quartering bigger potatoes can even the playing field. Air fryer mini potatoes will take about 15 to 20 minutes at 400°F / 200°C to cook through and be tender and golden crispy. Adjust your cooking time as needed.

Can I Air Fry Baby Potatoes Whole?

If your potatoes are smaller or simply more even in size, feel free to leave them whole. Whole baby potatoes may take a bit longer, so adjust the cooking times accordingly. 

Can I Use Other Kinds of Potatoes?

Although you can make air fried potatoes with almost any kind of potatoes, I love the simplicity of baby potatoes. This recipe calls for baby potatoes, and baby red potatoes work well, as do Yukon gold, purple potatoes, new potatoes, and most of the thin skin potatoes. You will have to cut bigger potatoes and adjust their cook time.
