Real talk friend. Soft, soggy, oily potato wedges can ruin your meal. I used to put up with meh wedges, till I discovered making them in the Air Fryer. And what a difference.

These Air Fryer Potato wedges turn out crispy on the outside, fluffy inside, and are ready in under 20 minutes of cook time. I really recommend soaking them for that extra crisp, but I skip soaking when I’m short on time. If you love KFC potato wedges or your favorite quick-stop take-out joint ones, you’ll adore these homemade wedges.

This right here is my favorite way of making this versatile side dish, appetizer or snack, my go-to for busy weeknights, picky eaters, take-out at home vibes or those “what can I make with potatoes?” moments that I get pretty much every other week.

  • Lighter: Bye-bye, deep-frying! This *crispy* only requires ½ teaspoon of oil!

Key Ingredient Notes

This is fairly easy to pull together. But I have some notes and variations for you.

  • Potatoes: I think Russet potatoes work best to give crispy edges, but Yukon Gold are creamier inside and also good. Size and length matter so, go for larger potatoes as you get more / longer wedges from these. If your wedges never crisp up, you might not be using the best potato type or there being extra moisture.
  • Oil: I tend to use olive oil for air frying, but you can use any neutral vegetable oil that is suitable for high heat. Sunflower oil and rapeseed oil work.
  • Seasoning: Feel free to keep it simple with salt, or add things like Italian seasoning, curry powder, smoked paprika, BBQ Seasoning, garlic powder etc. Season well, as wedges are a blank canvas for seasonings.

How To Make Potato Wedges in Air Fryer

No overthinking, just pretty easy simple steps. Get the complete ingredients list and instructions from the recipe card below.

  1. Scrub the potatoes clean if needed. Place them on a cutting board, cut into wedges and soak them in a large bowl ice cold water for 30 minutes. Then thoroughly dry uncooked potato wedges and add to a bowl.
  2. Add olive oil and season potato wedges and mix until evenly coated.
  3. Preheat air fryer to 400 degrees F / 200 degrees C.
  4. Place wedges in the air fryer basket and air fry for 15-18 minutes gently shaking several times during air frying until golden crispy and cooked through. Cook in batches if your Air Fryer is not large enough. Feel free to use plastic tongs to flip the wedges over half way through cooking.

Air Fryers temperatures can vary based on the make and model, so it cooking time may take some adjusting to get the timing just right. I recommend starting off with less time and then adding more time if needed to get to your preferred level of doneness.

Bintu’s Expert Tips and How To Get Extra Crispy Wedges

Although quick to make, I have a few tips that make a big difference

  • Cut wedges to the same size and thickness so that they cook evenly.
  • Do not skip the soaking part if you have time. Removing excess starch will help you to get the perfect extra crispy consistency the whole family will love. 
  • Be sure to thoroughly pat the potatoes dry with a kitchen towel or paper towel otherwise they will have excess moisture and may not crisp up. 
  • If you want even crispier air fried potato wedges, increase the cooking temperature by 10 degrees during the last 2-3 minutes of cooking. 
  • This recipe calls for ½ teaspoon of oil which helps crisp up the wedges. I find that using too much oil end up in soggy wedges.
  • Don’t overcrowd the basket, cook in a single layer, allowing the hot air to circulate and crisp up the food. You may need to cook these in 2-3 batches.
  • Save time and leave the skins on! They taste great and hold lots of nutrients. If you have picky eaters, remove them and still prepare the recipe the same way. 
  • Be sure to shake these during cooking so that they crispy up all over.
  • No-soak method. When short on time skip soaking completely. However, toss the wedges with 1 teaspoon cornstarch before cooking.
  • If you want some takeaway-style wedges, simply sprinkle a little extra salt straight after cooking whilst they’re still hot. Trust me, everyone will thank you.

Make Ahead and Storage

  • Make Ahead: Soaking your cut potatoes in cold water really helps crisp them up. So prep early enough that your potatoes can soak for at least 30 minutes. You can slice and soak the night before; just be sure to store the potatoes in the fridge. We don’t recommend soaking the potatoes for longer than 18-24 hours. 
  • Store: Leftovers can be stored in an airtight container the fridge and reheated in the air fryer for 2 minutes at 370F / 190C.
  • Freeze: To cook air fryer potato wedges from frozen, you may need to increase the cooking time to 18-25 minutes. 

Dipping Sauces

My kids and I love dipping these in really simple sauces like this delicious Yum Yum Sauce, and Pesto Aioli, sour cream, tartar sauce, better than take out Copycat Chick fil A sauce and Homemade Ketchup.

Serving Suggestions

This is a great side dish with so many things. Firstly feel free to season before serving with freshly grated Parmesan cheese, fresh parsley and fresh coriander. How Do I Cut Potatoes Into Wedges?

The easiest way to cut wedges is to cut the potato in half lengthwise. Next, cut each half in half until you have quarters. Turn each quarter cut side up and cut it down the middle into 2-3 wedges. Depending on the size of the tatoes, you should get 8-12 wedges.
