Spring dinners in our house need to tick a few very important boxes: quick enough for a weeknight, fresh enough to feel like we’re moving out of cosy winter food, and satisfying enough that nobody is rummaging through the cupboards an hour later.
These recipes are all ones I’d happily make on those in-between spring evenings – when you want something lighter and brighter, but still properly filling. The tarragon chicken feels a little bit special without being fussy, the honey garlic prawn rice bowls are brilliant when you want big flavour fast, and the air fryer salmon bowls with avocado orange salsa bring that lovely fresh zing that makes dinner feel instantly more sunny.
