Police were called to the attack at Tanyard Bar and Kitchen in Bexley High Street soon after midnight on February 1.
A man in his 30s was taken to hospital with “appalling injuries”.
Police think 29-year-old Swanley resident Billy Clarke could know about the incident and have released his name and picture.
Detective Chief Inspector Mark Rodgers, who is leading the investigation, said: “This was a very serious assault, in which the victim suffered appalling injuries.
“We believe Billy Clarke may have information that could assist our investigation, and are appealing for anyone who knows of his whereabouts to come forward.”
