If you do not have an air fryer or you would prefer to switch up the filling, you’re in luck. The recipe for the vegetable filling is the exact same as these Easy Vegetable Samosas which are cooked the traditional way in hot oil. You can follow any of the samosa recipes already on the blog and follow the instructions in this recipe to air fry.
How do I fold Air Fryer Samosas?
The authentic way to make samosas are with homemade wrappers, however, in most curry houses, they are made with ready-made samosa wrappers.
You can purchase samosa wrappers in most Asian grocers and if you have no luck, search for Chinese spring roll wrappers which are the same thing but a different shape. I use spring role wrappers in this recipe, so you can see how I prepare them for samosas below.

Can I reheat leftover air fryer samosas?
Absolutely! Reheating samosas in the air fryer is a great way to restore their crispiness. Simply preheat the air fryer, then cook the samosas for a few minutes until they’re heated through and crispy again.
Do I need to brush the samosas with oil?
While you can lightly brush the samosas with oil before air frying to help them achieve a crispy exterior, it’s not necessary. The air fryer will still produce crispy results without the added oil.
How long do you cook Air Fryer Samosas?
Cooking times can vary depending on the size and thickness of your samosas, as well as the temperature of your air fryer. As a general guideline, cook them at 375°F (190°C) for about 8-10 minutes, flipping halfway through, until they are golden brown and crispy.
Can you freeze these Air Fryer Samosas?
Yes absolutely. You can freeze the filling separately or fill the samosas first. I recommend that you spend time filling the samosas before freezing for ease when you later come to retrieve them from the freezer.
You do not need to defrost the samosas before placing them in your air fryer. Simply preheat your air fryer to 190C/375F and cook the samosas for 15-20 minutes, flipping them halfway through cooking time.

- Make sure you seal the edges of the samosas to prevent them from opening when cooking. You can do this by mixing a a paste using an equal amount of flour and water in a bowl.

Ingredients
- 2 tbsp rapeseed (canola) oil
- 1 tsp cumin seeds
- 1 onion, finely chopped
- 2 green bird’s eye chillies, finely chopped
- 1 tbsp garlic and ginger paste
- 2 floury potatoes, peeled and cut into 1cm (1⁄2in) cubes
- 2 tsp curry powder
- About 250ml (1 cup) homemade vegetable stock or stock cube stock
- 1 carrot, finely chopped
- 3 tbsp finely chopped coriander (cilantro)
- 125g (1 cup) frozen peas Salt, to taste
Instructions
- To make the vegetable filling, heat the oil in a large frying pan over a medium–high heat until bubbles appear.
- Add the cumin seeds. When they become fragrant in the oil, toss in the onion and chillies, and fry for 5–7 minutes until the onion is translucent and lightly browned.
- Add the garlic and ginger paste and fry for a further minute. Add the potatoes and mixed powder, and just enough water or spice stock to cover.
- Simmer until the potatoes are soft, topping up the stock if needed. Add the carrot and continue cooking until cooked through but still al dente.
- Reduce the stock until you have a dry potato mixture. Stir in the coriander (cilantro) and peas and season with salt. Set aside to cool.
- Fold the samosas as photographed above.
- When ready to cook, brush both sides of the samosas in a little oil. Pre heat your airfryer to 190C/350F and cook for 4-5 minutes. Turn over the samosas and cook for a further 4-5 minutes, this time at 200C/400F. Do not overcrowd your airfryer. Air fry in batches.
- Keep warm while you fry the remaining samosas. Enjoy!
