You are about to try some of the best shrimp toasts on the planet!

If you’re at all like me, you love Chinese shrimp toasts, one of the most popular appetizers in Chinese cuisine. When you try this recipe, you’re going to love them even more. Hint hint… don’t skimp on the shrimp!

When you order shrimp toasts at Chinese restaurants, they can often be a bit disappointing. Not when you make your own though. With this recipe, you are going to be piling the bread high with the delicious shrimp mixture and you will be enjoying shrimp toast the way they should be. Of course, if you don’t want to deep fry your shrimp toasts like they do at takeaways, you could always air fry them and I give instructions on how to do that below too.

How to get this recipe right.

Never skimp on the shrimp! Use any bread you like but make sure it is cut into thick slices. I usually just use thick cut white bread as that is what is used at most takeaways. The bread slices need to be thick enough for you to pile the minced shrimp on top.

Although you can make a paste out of the shrimp topping ingredients in a food processor, you might prefer finely chopping them with a knife. The different sized pieces adds to the whole experience. When you are ready to fry your shrimp toasts, the cooking heat of the oil is very important. I have seed recipes where the oil is far too high and the shrimp toasts burn easily.

So please, get that oil no higher than 175C/350F. If when you add the first few it look like they are getting too dark too quickly, reduce the heat of the oil before continuing. 

How do you fry the shrimp toasts?

This might seem a bit odd but you want to add the shrimp toasts to the hot oil shrimp side down. No, the topping will not fall off. You cook them in this way to get that shrimp cooked through and then turn them when the topping is beginning to go a golden brown.

What is the easiest way to fry the shrimp toasts?

Deep frying is best and easiest. In this case I didn’t have enough oil for really deep frying so I opted to use less. It still works fine but it is easier if you have a lot more oil in the wok. You need at least 10cm (4 inches) of oil to fry.

Can you use prawns instead of shrimp?

You sure can. The flavour will be about the same. In fact, I have used both prawns and shrimp on numerous occasions and could not really notice a difference.

How do you prepare this recipe?

Slice each piece of bread into four triangle. You can leave the crust on or slice it off. Then chop all of the topping ingredient into a thick paste. Again, this can be done using a food processor or knife. I prefer a knife as it’s easy and there’s less mess to clean up at the end.

Add as much of the topping as you can get onto each bread triangle. Once all of the topping has been placed on the bread pieces, add them to the oil and fry, shrimp side down for a minute or so and then flip them over to finish cooking for another minute. Check one and ensure that the shrimp is completely cooked through before serving.

Can you air -fry shrimp toasts?

Yes you can and I have found them to be very good air-fried? Are they as good as deep fried? Well no but they’re still awesome!

To do so, preheat your air-frier to 190C/375F. Spray each of the shrimp toasts with kitchen oil spray or brush them with a little vegetable oil. You don’t need much! Air-fry for 5-8 minutes, or until the bread is golden brown and the prawn mixture is cooked through.

Remember that air-fryers to vary so  be sure to check your shirmp toasts about 5 minutes into cooking to ensure they don’t burn. 

How long can you store leftover shrimp toasts in the fridge?

I really recommend making just as many as you think you will eat. Although you can store these shrimp toasts in your fridge for about 3 days, the most difficult part of it all is the frying and you will need to fry them up again before serving. These do not microwave well.

Can you freeze shrimp toasts?

Yes. For best results, freeze them on a baking tray in a single layer before frying. Then transfer the frozen shrimp bread pieces to a freezer bag. You can store them in your freezer for up to 6 months. 

To reheat, allow them to defrost completely and then fry them as in the recipe card below.

What do you serve with these toasts?

Anything you like really. The most popular dip is sweet chilli sauce which is especially good when you make your own. These shrimp toasts are the perfect starter for any Chinese meal and I have a lot of Chinese recipes for you here.

Get all the ingredients together before starting. It will save you time in the long run.





Slice each piece of bread into 4 triangles.





Finely chop or mince the shrimp and then add the spring onions (scallion) and coriander (cilantor) and keep chopping until you have a paste.





Place the minced shrimp in a bowl and add the egg white, soy sauce and sesame oil. Mix well to combine.





Top each of the sliced bread triangles with as much of the shrimp topping you can get on there. Dip each piece of shrimp coated bread into the sesame seeds to coat.





Fry the toasts, shrimp side down until golden brown and then turn over to brown the other side.





This is shrimp toast deliciousness!





Once you start eating these shrimp toasts, it’s very difficult to stop.

Ingredients

  • 300g (3/4 lb.) peeled and deveined shrimp (prawns)
  • 1 egg white
  • 2 tsp light soy sauce
  • 3 spring onions (scallions)
  • 4 tbsp coriander (cilantro), finely chopped, divided
  • 1 tbsp sesame oil
  • 2 clove garlic, minced
  • 8 slices thick white bread
  • 8 tbsp sesame seeds
  • Rapeseed (canola) oil for deep frying

Instructions

  1. Finely chop or mince the shrimp. You can use a food processor for ease but I find it better to do this with a knife. Add the spring onions (scallions) and coriander (cilantro) and continue chopping until everything is almost like a paste.
  2. Stir in the egg white, soy sauce and sesame oil. The slice each piece of bread into four triangles. You can leave the crust on or cut it off. Your choice. Top each triangle with as much of the shrimp mixture that you can get on them.
  3. Pour the seame seeds onto a plate and dip each of the toasts into the sesame seeds to coat.
  4. Now heat at least 10cm (4 inches) rapeseed (canola) oil in a wok or high sided pan until you get the heat up to 175C/350F. Add the shirmp toasts one at a time with the shrimp topping facing downward and fry for about 2 minutes or until the topping is turning a golden brown. Turn them over and continue frying until the bread is a delicious looking golden brown.
  5. Transfer the cooked prawn toasts to a wire rack or paper towel to drip any excess oil. Serve hot with sweet chilli sauce.
