Sussex Police confirmed a 36-year-old Brighton woman was arrested on suspicion of causing grievous bodily harm with intent today following the incident earlier this morning.
A 28-year-old man has been seriously injured and is now in hospital.
Police were first called to the scene at 10.30am and the road was closed shortly afterwards.
Paramedics were also in attendance as well as armed officers.
The cordon remains in place as of 1pm today (April 25).
A Sussex Police spokeswoman said: “On Saturday (25 April) at around 10.30am, police were called to a report that a man had been stabbed in George Street, Brighton.
“A 28-year-old man has been taken to hospital with serious injuries.
“Officers deployed to the scene, and a 36-year-old local woman was arrested on suspicion of causing grievous bodily harm with intent.”
Mark Earnshaw, an electrician, was parking up his van for work when he came across the aftermath of the stabbing.
The 59-year-old from Brighton said: “I saw a woman being arrested; she was held up against a wall and was handcuffed, and I saw the guy on the floor. There was a woman helping him and lots of police were there.”
Mr Earnshaw said: “There was someone next to me who knew the guy who’d been stabbed, and said they’d been with him yesterday.
“Apparently there was a bag that had been discarded further down George Street under a car which police found.
“There was a bit of an altercation outside Figaro’s Cafe and something happened from there.
“I got there about five mins after; I was parking my van around the corner for a job.”
He added: “I’m from Brighton and work a lot in this area, so it didn’t surprise me.
“But it isn’t a nice thing to see at 10.30am in the morning.”
The public can expect to see more police officers in the area as an investigation into the circumstances is launched.
Sussex Police are also appealing for information.
The spokeswoman said: “Police presence is currently heightened in the area as further enquiries remain underway to establish the full circumstances of the incident.”
“Witnesses, or those who may have footage that could assist the investigation are asked to contact police online, or by calling 101 quoting reference Operation Brewcastle.”
