Lately I’ve been living on rice bowls for lunch and dinners, they’re so versatile, so quick and these honey garlic prawn rice bowls hit that sweet–savory spot perfectly. The prawns cook in minutes, turning glossy and sticky while the rice steams in the microwave and the veg gets chopped, so you’re never more than a few songs on the radio away from dinner.

Nicky’s Notes

Make sure you get everything ready before you start cooking the prawns in this recipe, as they’re done in 5 mins!
I like to keep this bowl recipe nice and simple. Using microwave rice for the base and a mixture of raw chopped vegetables on top.
On busy nights it feels like cheating (in the best way), and on slower nights it’s the kind of bowl you can riff on endlessly—swap the veg, add a little chilli, or squeeze over lime and call it done.
Quick, flexible, utterly satisfying.
Drizzle the honey garlic sauce from the pan over the top for the perfect dressing!

I love the contrast: hot, fluffy rice; juicy honey garlic prawns; cool, crunchy toppings; and that sauce ties it all together.
