Adela Caka, 33, and Joni Leti, 35, opened Salt and Charcoal in July last year after months of refurbishment.
The couple moved to Brighton 12 years ago and said the restaurant in London Road, Brighton, was their first business venture.
Joni, head chef, claimed the restaurant has the only whole spit roast in the city. They use it to slow cook lamb for five hours.
“We like to be a traditional Greek restaurant not just a takeaway. We get many family people here,” said Joni.
“We refurbished the restaurant over the period of about two to three months. I built everything perfect to do this job.
“It’s big portions, no one has this kind of spit roast in Brighton apart from us. We cook the whole lamb on the spit roast.
“As a new business it is going good, it is our first in Brighton.”
The couple run the business with Adela’s cousin Leonard Zhuku.
Joni said: “Everything here is fresh, we cook it all fresh every day. We have customers coming, lots of birthday parties.
“It has been good but also hard setting up a new business. We do traditional Greek food, not just a simple gyros.
“It’s big portions, no one has this kind of spit roast in Brighton apart from us.
“We have daily specials, moussaka, soup of the day, lasagne. On New Year’s Eve we cooked seven whole lamb.
“We focus more as a restaurant rather than a takeaway.”
