Chalk, on the Wiston Estate, a winery estate in North End, near Pulborough, releases its new offerings today.
The new Estate Menu will have five courses and uses ingredients from Wiston’s walled garden, wider grounds and the Sussex coast.
The five-course menu will change monthly as the weather changes and new produce comes into season.
It will be served on Friday and Saturday evenings at £65 per person. Courses include artichoke salad from the walled garden and fallow deer loin from the estate.
There is the the option to add a selection of wines to go with the menu for £40 per person.
Wiston Estate is famed for its wines, made from fruit grown on its vineyards on its south-facing chalk slope.
The Weekday Set Lunch menu is a more affordable option, with two courses for £30 and three courses for £35 every Wednesday to Friday.
A spokesman for Chalk said: “This regularly changing-menu has been thoughtfully crafted to put seasonal and locally sourced ingredients of the highest quality at the core.”
Dishes include a soup made from pumpkins grown on the estate, a ragu with venison from the estate and apple crumble with cinnamon ice cream.
The spokesman added: “Our restaurant draws together the highlights of fresh local produce, including ingredients from the estate and its neighbours.
“We aim to create dishes that express the nature, heritage and purpose of the land we share. Our Estate Menu showcases produce grown, farmed and foraged on Wiston Estate and the Sussex Coast.”
